Belvidere's new Mexican eatery ‘about family’
“This is in her honor,” said Francisco Figueroa, of the restaurant, which he named for his wife of nearly 20 years. “It started out only as four walls, and we built it up.
My goal is to put out quality Mexican food; it has to be 100 percent
authentic with fair prices, because we understand the economy."
“I was scared to open because the economy is bad, but I know if we didn’t do anything, it can’t get better,” Francisco said. “We need to help the economy turn back. We’re happy here and people are responding.”
“This is about family,” said Carmina Figueroa, “We like to take care of our business and our customers. We wanted to open something nice and small, and we drove a lot looking for the right place.”
The couple are eager to watch Quinta Carmina blossom to accommodate customers and their families who seek a dining experience that is “a little different from most Mexican restaurants,” Carmina said. The restaurant, which can hold almost 70 people, features hand-blown glasses purchased from artisans in Mexico; ceramic lighting fixtures hand-sculpted and painted by indigenous people in Oaxaca; and rows of booths, a full bar and tabled seating using rich woods and colors.
“It’s like anything else,” Francisco said. “You start with the hardest thing and move forward.”
